Most recently I have discovered the genius that is a slow cooker! I know I’m a bit behind but this is literally world genius! After borrowing Tom’s mums I got to work using it, I made slow cooked roast lamb and BBQ pulled pork. They both turned out beautifully!
After giving back the slow cooker and not really thinking much else about it a couple weekends later Tom’s Mum bought both myself and Tiffany (Tom’s sister) our own slow cooker each! That way she gets to keep hers. It came straight out the box and I was rummaging through the cupboards trying to find something to slow cook when I found an old can of Tinned tomatoes. Its Autumn now so it felt fitted to create some Tomato Soup. For the First time ever. Without a recipe.
Luckily it turned out amazing! even if I did totally wing it!
Slow cooker Tomato Soup.
1 Can of tinned tomatoes
250 ml of stock- I used beef, I think Veg would have given a less meatier taste.
1/2 a white onion
1/2 tsp Garlic powder
1/2 tsp Salt
1/2 tsp Pepper
2 tbsp butter
Add all in to slow cooker in that order.
Cook on High for 3-4 hours or Low for 6-8 hours
I like my soup quite smooth so I blended it all up until smooth but you can leave as little or as much chunk in as you like.
I served mine alongside some buttery bread. Fresh out of the slow cooker.
This weather is perfect for those autumn slow cooker soups to come home from work too. I hope you all enjoy it as much as I did!
