Toffee apple traybake 

Today’s bake was toffee apple traybake. I love apple bakes! Since finding a house on a track just outside of our village that give away the apples they have grown I constantly go back and forth using their apples. They supply me with cooking apples and eating apples and I use them all for my baking.

This traybake was really simple to make and was really yummy.

To start with I mixed all the ingredients together, and then folded in the chopped apples and put straight in to the oven and baked for 35 minutes.

I finally got to use my Mary Berry Traybake dish that I have been saving for ages! And it was brilliant!

My only struggle was creating the toffee icing to top it with I didn’t have any single cream so I used a slightly different method.

I used-

2 tbsp of butter
3 tbsp of milk
110g of brown sugar
120g icing sugar
1/2 tsp of vanilla extract

this makes ALOT

I melted together the milk butter and sugar and boiled over a high heat for a minute and then beat in the icing sugar, if the recipe gets too thick add a bit more milk.

Then drizzle over the top of the tray bake once cooled. I had some left over melted sugar and butter and drizzled this over too.
