Okay so I was going to make cider cake but due to time constraints and working a lot I baked a pie instead. With my own created recipe and by god it turned out good. It’s possibly one of the best pies I have ever made and it felt only right that I add it to my National Baking Week Recipe’s.
Anybody who is looking for a nice and cheesy pastry dish this is for you!
500ml of cheese sauce
1 chicken breast
half a Gammon joint (already cooked)
2-3 handfuls of frozen mixed veg
150g grated cheese
Start by lining your pie dish with the short crust pastry, then line the pastry with baking paper and fill with rice or baking beans. Blind bake for 15 minutes at 160’ take out and remove all the beans and paper then bake for a further 5 minutes. Once done put to one side.
Make up your cheese sauce.. I used 200ml of milk and 300ml of boiling water and then added the 10-12 heaped tablespoons of my cheese sauce granules.
In a large frying pan add you cooked chicken and frozen veg on a medium heat once this starts heating through at your cheese sauce, gammon and cheese and allow the sauce to thicken, once All thoroughly heated through and to a good thick consistency pour your filling in to the pie base.
Lay over the top of the filling your puff pastry and crimp up the edges or leave them rough, totally your call.
Egg wash your pastry and lightly sprinkle any left over cheese on to the pastry.
Bake for 35 minutes at 180’c if the topping begins to brown cover with tin foil and continue to bake.
Enjoy with some nice fresh veg.
