As my baking obsession continues, I have signed up to do a monthly bake box! This is something I found online. Their are a few different subscription baking boxes that I saw and this was by far my favorite. They have so many different versions of the box. I went for the standard box. My real reason for signing up to this is that I found myself stuck in a baking rut. I was doing the same things over and over just different flavors and as fun as this can be I wasn’t really thinking outside of the ‘box’.
This months box was really great and stuck well with the Autumnal theme of the year.
Pumpkin Spiced Cake
Anyone that knows my baking knows how much I hate sponge cake. I hate baking it, I hate icing it, I hate eating it. Sponge cake is the bane of my baking. I can never get it right. However this cake was slightly different and slightly odd. This is where the whole thinking out of the box came from. I have never tried Pumpkin spiced anything. Not even Costa! And I have never ever tried a recipe like this. I honestly loved it!
With each Bake box you get all the dry ingredients sent through. So Sugar, flour, Icing Sugar, Spices, etc etc. In this recipe I had to add Butter, Egg, Milk, Sour cream and Cream cheese. Now if your the same as me and thinking WTF do you need sour cream for? Well I’m not entirely sure what it did but this cake was on a whole other level.
My only downfall of this cake was my terrible tin prepping. Half of the cake got stuck to the bloody tin. I did manage to salvage a lot of it but It did look like a mess at one stage.
Tom and I absolutely loved this cake. The flavors of the spice are lovely and warming. Its perfect afternoon tea snack with a nice warm cup of coffee. The best description we could give it was very ‘Desserty’ It’s not quite a sponge and its not quite a pudding. It’s somewhere there abouts and I think this is the sour cream effect.
The Bake boxes are beautiful little gifts and always make me so excited for my next surprise bake. I would totally recommend this for all bakers from beginners to professionals. It’s simple and fun and gives you something new to try.
