Chocolate Chip M&M Cookies!

Oh Lord these were so good.
I sound really shocked at that but in all honesty I have hated baking sponge cakes and cookies for years, Brownies are my arch nemesis. Give me a cheesecake or a pie and I’m your girl but my cakes always ended up flat or raw, brownies were never right and cookies ended up an absolute mess. But lately I have no clue why, probably unknown pregnancy cravings but I’ve been really playing with baking and recipes.

So far this has been my favourite. I actually sat with a cup of tea and ate 3 of them! I ended up having to give loads away otherwise I would have literally devoured the lot!

I’ve said before that I can never stick to recipes and this was no exception. So I used just a basic chocolate cookie recipe in one of my old books that I have had for years and slightly adapted it.

125 g Butter I used Unsalted
100 g Dark Brown Sugar
100 g Granulated Sugar
1 Egg
1 tsp Vanilla Extract
25 g Cocoa Powder
175 g Plain Flour
1/2 tsp Bicarbonate of Soda
1/2 tsp Baking Powder
1/2 tsp Salt
2 share bags of M&Ms
100 g Milk Chocolate Chips

Preheat the oven to 190c.
Mix together the butter and both sugars until well combined.
Add the Egg, Vanilla Extract, Cocoa Powder, Plain Flour, Bicarbonate of soda, Baking Powder and salt. Once all mixed together and creates a cookie dough, add in the m&ms and chocolate chips.
I then rolled the mixture in to a large ‘sausage’ and cut in to equal sections. Obviously this bit is totally up to you, you can make them as big or as small as you like and that will dictate how many you get out of the batch itself. I managed to get 24 fairly large cookies.
Place on a lined baking tray and bake for 12 minutes. I did this in batches of 6. 1 tray at a time in the middle of the oven.
When you take them out leave them on the paper/tray for a couple minutes to cool slightly, and begin to ‘harden’ then move to a wired rack to cool completely, If you can wait that long!

Now that I have found what works (for me) I will 100% be sticking with it, however I will be playing with flavours! These cookies had a beautiful soft/fudgey centre with the crisp outer edge with little colourful bursts of M&M’s through out.
